Egg Casserole (Perfect for Two)

Breakfast casseroles are a staple for big family breakfasts, brunches, and Christmas morning breakfasts. These casseroles are comfort foods and remind us of family and friends. But, what if you are craving an egg casserole for breakfast, and it’s only the two of you? I have a solution for you. This small-batch recipe allows you to have a delicious egg casserole for breakfast and not have leftovers for days. It’s a perfect solution for empty nesters, couples, or singles.

The base of the casserole is the egg mixture, as is typical of all breakfast casseroles. All other ingredients can be substituted to your liking or what you already have in your refrigerator. For this casserole, I used ham for the meat ingredient. But you can substitute the ham for browned sausage or even cooked bacon. For the vegetable ingredients, I choose green onions. You can also substitute the green onion for any vegetable of your choice. For the bread, I used leftover King’s Hawaiian rolls. Egg casseroles are great for using leftover bread or rolls, but you can just as well use any type of bread you have on hand. However, the casserole does best with white bread. As you can see this Breakfast Egg Casserole is very versatile. I bet you have all the ingredients to make this for breakfast tomorrow!

Breakfast casseroles are known for their ease of preparation. This one is no different. This casserole can be thrown together very quickly, especially if using ham since it is already cooked. The first thing you will want to do is chop your ham, bread, and vegetables. Next, whisk your eggs along with your sour cream, salt & pepper. Add remaining ingredients and stir to combine. Finally, pour the mixture into prepared dishes and bake as direct. Now just to wait for it to cook, then onto enjoying a yummy egg casserole to start your morning!

Egg Casserole (Perfect for Two)

This easy Breakfast Egg Casserole for two can be whipped together in no-time. If you thought breakfast casseroles were just for Christmas morning and large family gatherings, you will be pleasently surprised with this recipe for two. Now you can have this yummy Breakfast Egg Casserole anytime! And no leftovers!

Ingredients
  

  • 3 Eggs
  • 3 TBSP Sour Cream
  • 1⅓ Cup White Bread (Cut in Half Inch Cubes)
  • 2 Green Onions (Sliced)
  • Cup Cheddar Cheese (Shredded)
  • Cup Ham (Diced)
  • ¼ tsp Salt
  • ¼ tsp Black Pepper

Instructions
 

  • Preheat Oven to 350° F.
  • Spray two, two cup capacity oven safe dishes with cooking spray.
  • In a bowl, whisk eggs, sour cream, salt & pepper.
  • Add in cubed bread, shredded cheese, diced ham, and sliced green onions. Stir to combine.
  • Pour mixture into prepared oven-safe dishes.
  • Bake at 350° F for 20-25 minutes, until the eggs are set.

Notes

  1. Can substitute leftover dinner rolls for bread.  I used leftover King’s Hawaiian Rolls.
  2. Can substitute milk for sour cream.
