Snickerdoodle Cookies (Perfect for Two)

What’s better than a warm cookie? For me, I can’t say that there are many better things. I, like many, am one who loves desserts. Cookies are at the top of my favorite desserts list. Snickerdoodle cookies bring back sweet memories from childhood. Remember, it’s the cookie dough you got to play with before you ate the cookie. A cookie dough that you got to roll into a ball and then rolled in the cinnamon and sugar mixture. What could be better than that when you are a child? That is twice the sweetness!

As an empty nester, it is not wise for me to have a lot of sweets around the house all the time. My temptations would get the best of me, and I would consume way too many sweet treats if I had too many around. Therefore, small-batch recipes for sweets are a great self-control method. This snickerdoodle cookie recipe is perfect for just two people. It makes six cookies that are soft in the center and crisp and chewy around the edges. The buttery cookie with the cinnamon and sugar coating is a perfect combination. A perfect bite and a perfect sweet treat for any time of the day!

To make these snickerdoodle cookies make sure you bring your butter to room temperature. If you don’t the butter will not cream well with the sugar. Once the butter is at room temperature, add butter, egg yolk, and sugar. Mix with a hand mixer until a creamy texture. In a separate bowl, add flour, baking soda, cream of tarter, and salt. Pour dry ingredients into the butter mixture and stir until combined. In a small bowl, mix cinnamon and sugar. Now to the fun part! Roll dough into 1-inch balls and then roll the ball in the cinnamon and sugar mixture until the entire outside is coated. Bake the cookies as directed and enjoy this sweet treat. You deserve it!

Snickerdoodle Cookies (Perfect for Two)

A crispy around the edges and chewy in the middle, cinnamon and sugar cookie. What could be better for dessert or just an afternoon snack?

Ingredients
  

  • 2 TBSP Unsalted Butter (Softened)
  • ¼ Cup Sugar
  • 1 Egg Yolk
  • 6 TBSP All Purpose Flour
  • tsp Baking Soda
  • ¼ tsp Cream of Tarter
  • 1 Pinch Salt
  • 1 TBSP Sugar
  • ½ tsp Ground Cinnamon

Instructions
 

  • Preheat oven to 375° F.
  • Cream softened butter, sugar and egg yolk until fluffy.
  • Mix flour, baking soda, cream of tarter, and salt together in a small bowl.
  • Add flour mixture to the sugar mixture and stir until combined.
  • In a separate small bowl, mix the ½ tsp of cinnamon and 1 TBSP of sugar until combined.
  • Shape cookie dough into 1-inch balls and roll in cinnamon and sugar mixture.
  • Place cookies on a parchment paper lined baking sheet 2 inches apart.
  • Bake 8-10 minutes until the edges begin to turn a slightly golden brown color.
  • Remove from baking sheet onto a cooling rack to cool completely.
