Sliders are such a fun lunch or party food. There are so many varieties to choose from. These Roast Beef Sliders are one of my favorite sliders to make and eat! They are quick and easy to throw together when you are short on time. The simple dressing that you pour over the top before baking really is the star of the show. It has so much flavor and really enhances the flavor of the roast beef. These little sandwiches are great for lunch, a simple supper, or even for an evening watching the game at home (when it’s just the two of you).
These sliders can be made with deli roast beef and any cheese of your choice. I like to use a really good roll, such as Kings Hawaiian rolls, but any 2″ x 2″ dinner roll will do. As I stated before, the dressing is really what makes these sliders delicious. The richness of the melted butter and dijon mustard, the seasoning of the garlic and onion, and the crunch of the poppy seeds really set these sliders apart.
The assembly of these Roast Beef Sliders could not be any easier. First, if the dinner rolls come in a package of 12 all connected, cut in half and leave the six rolls you are using attached. Then cut the slab of six rolls to make a top bun and a bottom bun. Layer the meat and cheese on the bottom buns and top with the top buns. Place in prepared pan and set aside.

In a small microwave-safe bowl, melt butter. Add dijon mustard, garlic salt, minced onions, and poppy seeds to the melted butter and stir to combine. Pour on top of sliders. I like to use a pastry brush to brush the butter mixture onto the rolls instead of pouring the mixture. The pastry brush method allows more of the butter mixture to stay on top of the sliders instead of all rolling off the sliders and setting in the bottom of the pan.

Roast Beef & Cheddar Sliders (Perfect for Two)
Ingredients
- 6 Each Hawaian Sweet Rolls
- 7 oz Roast Beef Lunchmeat
- 6 Slices Cheddar Cheese
- ¼ Cup Butter
- 1 tsp Worcestershire Sauce
- 1½ tsp Dijon Mustard
- ¾ tsp Poppy Seeds
- 1 tsp Dried Minced Onions
- ¼ tsp Garlic Salt
- ¼ tsp Black Pepper
Instructions
- Preheat oven to 350° F.
- Line an 8"x8" pan with foil and spray with cooking spray.
- Remove 6 rolls from their package and slice them in half to make a top and a bottom buns. Do not cut the individual rolls apart, leave the tops connected together and the bottoms all connected together.
- Top the bottom buns with the roast beef and cheese; layering the lunchmeat and cheese.
- Top the roast beef and cheese with the top buns and set aside.
- In a small microwave safe bowl, add the butter. Microwave for 30 seconds or until melted.
- Add worcestershire sauce, mustard, poppy seeds, onions, garlic salt, and pepper to the melted butter and whisk to combine.
- Pour the butter mixture over the sliders and brush the mixture with a pastry brush to ensure even coverage on all buns.
- Cover with foil and bake for 15 minutes. Remove sliders from oven and remove foil.
- Return the sliders to the oven and bake for 5 more minutes.
- Remove from oven and slice into individula sliders and enjoy!
