But now your child is off to college, and you want to make sure your college student eats a healthy breakfast before they rush out the door to classes. Here are some quick & easy microwave breakfasts college students can make in their dorm room and still make it to class on time.
A good breakfast can be savory or sweet. However, to be a meal that will give your child the energy and sustenance needed to last until lunch, it needs to contain protein. In this post, there are five quick & easy microwave breakfasts your student can easily master. They are Creamy Microwave Scrambled Eggs, Microwave Breakfast Buritto, Microwave Omelet, Almond Butter Peach Oatmeal, and Honey Almond Rice Bowl. Each of these microwave breakfasts has plenty of protein to get your college student through the morning.
Microwave Breakfasts – Eggs
Eggs for breakfast have always been a go-to for a great source of protein. However, we’ve all had eggs made in the microwave before that were rubbery and just not appetizing. There are a couple of tricks to making great scrambled eggs in the microwave. I know, I know, you’re not going to believe me until you try it! So here are the tricks.

1) You have to microwave for short (15-30 second) spurts and stir in between each round of cooking. The stirring between each round of cooking is so important. It breaks up the egg making the scrambled texture we are looking for, instead of a yellow rubber disk. And let me tell you, no one wants a yellow rubbery disk for breakfast or any other meal!
2) The second trick is to quit microwaving when there is still about a tablespoon of eggs in the center that is still liquid. Now I know you are thinking I’m crazy here, but I’m really not. This liquid is what keeps the eggs creamy and not rubbery. The liquid will cook as you stir it into the rest of the hot, cooked eggs. With these two tricks, you will have yummy and creamy scrambled eggs. Who needs a stove?!!
Microwave Breakfast – Nuts & Nut Butters
An easy way to have a hearty breakfast with protein is to use nuts or nut butter. The best way I have found to use these in microwave breakfasts is to combine them with hot cereals or grains. Oatmeal is always an easy way to have a hot and nutritious breakfast. Add in some nuts or nut butter with some dried or fresh fruit and your college student will have a well-rounded breakfast and be ready to start the day right.
Another way to use nuts is to add them to rice. Pre-cooked rice is somewhat new to the cooking world. But what a great quick and easy way to have a nutritious meal. Now I know that rice for breakfast may sound a little weird, and I was skeptical when I first tried it. But I will say it is now one of my favorite breakfasts (and snacks) when you add in butter, honey, and nuts. It really is a satisfying combination.
Have your student give these microwave breakfasts a try. All they need is a few simple ingredients, a mini fridge, microwave, microwave safe bowls and measuring cups and spoons. With that they will be ready to give these recipes a try!
Microwave Breakfast Recipies
Creamy Microwave Scrambled Eggs
Ingredients
- 2 Eggs
- ½ TBSP Butter (Cubed)
- 2 TBSP Shredded Cheese
- Salt
- Pepper
Instructions
- Add eggs, salt & pepper in a microwavable bowl.
- Whisk to combine.
- Add in cubed butter and shredded cheese and whisk to combine.
- Place in microwave and cook for 30 seconds.
- Whisk to mix the cooked eggs with the liquid egg mixture. Mix Well.
- Continue to microwave the egg mixture for 15 second intervals until the majority of the eggs are cooked around the edges of the bowl. You want there to still be some liquid egg mixture in the center.
- Whisk one more time to mix the cooked egg with the liquid egg mixture. The remaining egg mixture will cook as you are whisking the eggs together.
Notes
- You should stop cooking the eggs when they are done around the edges but still have some liquid in the center.
- In order to have creamy eggs, it is very important you only microwave the eggs for short (15 seconds) intervals and mix very well between microwaving. This is what will create the creamy texture.
- You can substitute a tablespoon of cream cheese for the shredded cheese.
Microwave Breakfast Burritos
Ingredients
- 2 Eggs
- ½ TBSP Butter (Cubed)
- 4 TBSP Cheddar Cheese (Shredded)
- 1 Dash Salt
- 1 Dash Pepper
- 1 EA Pre-Cooked Sausage Patty (Diced)
- EA Flour Tortilla
- Salsa, Jalopenos, Hot Sauce (Optional)
Instructions
- In a microwave-safe bowl, whisk the eggs, salt & pepper.
- Add in 2 TBSP of the shredded cheese and the cubbed butter. Whisk again to combine with eggs.
- Microwave 30 seconds. Remove from microwave and whisk or stir to break up eggs and combine the cooked eggs with the liquid egg mixture.
- Return to the microwave and continue cooking eggs in 15 second interverls. Remove between each 15-second cooking intervarl to stir and combine the cooked eggs with the liquid egg mixture.
- The eggs will be finished cooking when they are cooked around the edge of the bowl, but still liquid in the center of the dish. There should be about 1 TBSP of liquid in the center. Stir to combine the cooked eggs with the liquid mixture. The eggs will continue to cook as you are stirring the eggs.
- Add diced pre-cooked sausage patty on a flour tortilla and top with the scrambled eggs and the remaining 2 TBSP shredded cheese.
- Roll the tortilla to enclose all the ingredients. Top with a wet paper towel.
- Microwave for 30 seconds.
- Top with favorite salsa, hot sauce or jalopenos. Enjoy!
Notes
- I used Jimmy Dean pre-cooked sausage patties.
- Can substitute diced ham lunchmeat for diced sausage patty.
- Do not overcook microwave scrambled eggs.
Microwave Omelet
Ingredients
- 2 Eggs
- ½ TBSP Butter (Cubed)
- 2 TBSP Shredded Cheese
- Dash of Salt
- Dash of Pepper
- 4 TBSP Your Choice of Vegetables (Diced)
- 1 Pre-cooked Sausage Patty (Diced)
Instructions
- Add eggs, salt and pepper to a microwave safe bowl. Whisk together.
- Add cubbed butter and shredded cheese to the egg mixture. Whisk together.
- Microwave for 30 seconds. Remove and whisk mixture to combine cooked eggs with liquid egg mixture.
- Add in diced vegetables and diced sausage patty. Stir to Combine.
- Microwave for 30 seconds. Stir to break up eggs and combine cooked eggs with liquid egg mixture.
- Continue to microwave mixture in 15-second intervals until the majority of the eggs are cooked around the edge of the bowl and there is some liquid still in the center. Stir to combine. The liquid will continue to cook as you stir the mixture together.
Notes
- You can substitute 2 TBSP of diced ham lunchmeat for diced pre-cooked sausage patty.
- I used Jimmy Dean’s pre-cooked sausage patties for this recipe.
- It is important to cook the omelet in short 15-second intervals and stir in between intervals to keep the eggs from getting rubbery.
Microwave Almond Butter & Peach Oatmeal
Ingredients
- ½ Cup Old Fashioned Oatmeal
- 1 EA Peach Cup (Do not drain the juice)
- ½ Cup Milk
- 1 ½ TBSP Almond Butter
- 1 ½ TSP Honey
- ¼ TSP Ground Cinnamon (Optional)
- 1 Dash Salt (Optional)
Instructions
- Add oatmeal, juice from peach cup, milk, salt (optional), and ground cinnamon (optional) to a microwave safe bowl.
- Stir to combine. Microwave for two minutes.
- Add peaches, almond butter, and honey. Stir to combine.
- Enjoy!
Notes
- You can substitute quick-cooking oatmeal. If you do, adjust your liquids and microwave time based on the quick-cooking oatmeal package instructions.
- You can substitute the almond butter for any other type of nut butter you prefer.
- You can substitute the peaches for any kind of fresh fruit. If you do, increase your milk to 3/4 cup.
Microwave Honey Almond Rice
Ingredients
- 1 EA Wholegrain Brown Ready-Made Rice (8.8 Oz Package)
- 2 TBSP Butter
- ¼ Cup Slivered Almonds
- ¼ Cup Dried Cranberries
- 1 TBSP Honey
Instructions
- Microwave ready made rice per package directions.
- Pour rice into a bowl.
- Add butter, almonds, cranberries and honey.
- Stir to combine ingredients and melt butter. Enjoy!
Notes
- I used Uncle Ben’s Wholegrain Brown Ready Rice and microwaved it in the package according to the package directions for 90 seconds.
- Can substitute almonds for pecans or cashews.
- Can substitute dried cranberries for any type of dried fruit or fresh fruit you have on hand.
