I’m such a cookie lover. There are not too many that I have tried that I don’t love. There is something about a handheld dessert that you can just grab one or two (or more) and be on your way! No-bake cookies are a great option in the summer when you don’t want to heat your house when using the oven. But what if you are not in the chocolate mood? I have a solution for you. . .No-Bake Oatmeal Scotchies. This small-batch recipe of No-Bake Oatmeal Scotchies is a perfect treat for you and your hubby!

This recipe is very similar to the no-bake cookies you grew up eating, the ones made with cocoa and peanut butter. But, these No-Bake Oatmeal Scotchies do not have cocoa. Instead, they have butterscotch morsels. The butterscotch morsels give the cookie its sweetness. Also, the morsels, along with the butter, help the cookie take on the consistency of a no-bake cookie once it cools.

Making these No-Bake Oatmeal Scotchies is easy and quick. First, measure out the butterscotch morsels and set aside approximately half of the morsels to top each cookie. Next, add the butter, peanut butter, sugar, and milk to a small saucepan. Over medium-high heat bring the ingredients to a boil and boil for one minute. Remove from heat and stir in the vanilla, salt, and butterscotch morsels (the ones not reserved for topping the cookies). Finally, stir in the oatmeal until all ingredients are combined. Drop the cookie batter onto parchment paper using a cookie dough scoop and top with the remaining butterscotch morsels, set aside earlier. I usually use a 2 tablespoon size cookie dough scoop (yields 6-7 cookies).

No Bake Oatmeal Scotchies (Perfect for Two)

Quick and Easy, no bake cookie recipe with a twist. This no bake recipe is made for those who want something different than the typical chocolate variety. These are super sweet made with butterscotch morsels and dab of peanut butter. The small portions size is great for two people, or one if your not in the sharing mood!

Ingredients
  

  • 1/4 Cup Butterscotch Morsels (Divided)
  • 2/3 Cup Quick Cooking Oatmeal (Dry)
  • 1/4 tsp Vanilla Extract
  • 2 tbsp Milk
  • 1/4 Cup Sugar
  • 2 tbsp Salted Butter
  • 1/8 tsp Salt
  • 1 tbsp Peanut Butter

Instructions
 

  • Measure out Butterscotch Morsels. Remove 21 morsels from measuring cup and set aside for topping the cookies.
  • In a small saucepan, add butter, peanut butter, sugar and milk. Bring to a boil over medium high heat. Boil for one minute.
  • Remove from heat and stir in vanilla, salt and butterscotch morsels. Stir for 1 minute. It is okay if the butterscotch doesn't completly melt.
  • Add oatmeal and stir until combined.
  • Drop 2 tablespoons onto a sheet of parchment paper to cool. Top cookies with the remaining butterscotch morsels set aside earlier. Allow cookies to set and cool for at least 15 minutes.
