Nothing says home cooking better than a classic meatloaf recipe. These Mini Meatloaves are just the right size for two; the perfect amount once you become empty nesters. Meatloaf is that perfect comfort dish that everyone should have as one of their go-to dishes. It is easy to make and easy on the budget. This meatloaf recipe is tender with just the right amount of spices and a tangy glaze with just a touch of sweetness to top it off.
A few tricks I have learned making meatloaf over the years are to grate the onions into the mixture, crush the cracker very fine, and not overmix the ground beef. Grating the onions was a trick I learned many years ago when my daughter was young. She decided she didn’t like onions. So to hide the onions in dishes, I would grate them with a fine grater. This worked great for most dishes, especially casseroles. Grating the onion, evenly distributes the onion flavor throughout the dish without being able to see the onion. I also like to finely crush the crackers to a breadcrumb texture. This helps keep the meatloaf moist and juicy. And you won’t see big chunks of crackers in your meatloaf. Most importantly, do not over-mix the ground beef. Overmixing is a sure way to ruin meatloaf. It will make the meat rubbery and not tender like you want your meatloaf to be.
This Mini Meatloaf recipe is so easy. You will want to mix all the ingredients, except the ground beef, together first. Once all ingredients are mixed, add your ground beef. Mixing the ground beef just once helps to not overmix the beef and will keep the meatloaf tender. Now you will want to split the meat mixture into two portions and place it in two mini loaf pans. Prepare the sauce by mixing all ingredients and spoon over the top of the meatloaves. Pop them into a 350 degree preheated oven. Bake for 40-45 minutes. Mini Meatloaf (Perfect for Two)
Ingredients
- 1 Large Egg (Beaten)
- 1/4 Cup Milk
- 1/3 Cup Club Crackers (Finely Crushed)
- 1 tsp Garlic Salt
- 1/2 tsp Black Pepper
- 2 TBSP Onion (Finely Chopped)
- 1 Lb Ground Beef
- 1/4 Cup Ketchup
- 1/4 tsp Dry Ground Mustard
- 2 TBSP Brown Sugar
- 1/4 tsp Worcestershire Sauce
Instructions
- Preheat oven to 350° F.
- In a mixing bowl, beat egg.
- Add milk, crushed crackers, garlic salt, pepper and onion. Stir to combine.
- Crumble ground beef over mixture and mix together just until combined. Do not overmix.
- Shape evenly into two or four loaves and place on a small cookie sheet lined with parchment paper or sprayed with cooking spray.
- In a separate bowl, combine ketchup, dry mustard, brown sugar and worcestershire sauce.
- Spoon over meat loaves.
- Bake at 350° F for 40-45 minutes or until meat is 160° F in the center of the loaf.
Notes
- Grating the onion instead of finely chopping will more evenly disperse the onion flavor and limits any larger chunks of onion.
- Do not over mix the ground beef when mixing all ingredients together to make sure you have a nice tender meatloaf.
