When making these garlic mashed potatoes for two, I used Yukon gold potatoes and left the skins on. Yukon gold potatoes have a nice buttery taste and color. At the grocery store, I can get them in one-pound bags, which works nicely for this small-batch recipe. While I left the skins on, you can also peel the potatoes before boiling them if you like a smoother and silkier mash. I’ve done them both ways and they are great either way. But today I wanted a chunkier mash with more texture, so I left the skins on.
The garlic gives these mashed potatoes their great flavor. In my opinion, garlic gives everything great flavor. The cream cheese also gives the potatoes a little tang, which is a nice bonus. For me, butter, salt, and pepper are a must-have for any potato dish. I usually add the salt liberally. I would recommend starting with the amount called for in the recipe then taste to see if you prefer more. The cream gives the potatoes some richness. It is also what brings the mash together and reduces the denseness of the potato. Milk can also be used to thin the potatoes to your desired texture.

To prepare this dish, add washed, diced (and peeled if you prefer) potatoes to a pot. Cover potatoes and boil until potatoes are tender. Drain potatoes from cooking water and remove potatoes from the pot. Next, add butter and minced garlic to the cooking pot to melt butter and cook the garlic. This should only take a minute or two. You don’t want to overcook the garlic, as it will get bitter if overcooked. Add the potatoes back into the pot with the butter and garlic. Mash by hand for a chunkier texture or with a hand mixer for a smoother texture. Add in the salt, pepper, and cream cheese and stir to combine. Finally, stir in the cream until you reach the desired texture for the mashed potatoes. Serve with a good Salisbury Steak or any other meat main dish. Enjoy!
Garlic Mashed Potatoes (Perfect for Two)
Ingredients
- 1 lb Yukon Gold Potatoes
- ¼ Cup Butter
- 3 Cloves Garlic (Minced)
- 2 Oz Cream Cheese
- 1 tsp Salt
- ½ tsp Black Pepper
- ½ Cup Heavy Whipping Cream
Instructions
- Wash and dice your potatoes into 1-inch cubes.
- Place potatoes into a large pot and add water to cover the diced potatoes.
- Bring potatoes to a boil over medium-high heat.
- Continue cooking for 20 minutes or until potatoes are tender.
- Pour potatoes into a strainer to drain water.
- In the same pot, add butter and garlic. Allow butter to melt and garlic to cook over medium heat for approximately one minute.
- Add potatoes, cream cheese, salt and pepper into the pot and mash the potatoes over medium heat.
- Remove the potatoes from the heat and add the heavy whipping cream and stir to combine.
- Add more Heavy Whipping Cream as needed until the desired texture is obtained.
Notes
- If you prefer creamy mashed potatoes, peel the potatoes before boiling and use a hand mixer to obtain the creamier consistency after you add the heavy whipping cream.
- Make this the main dish by adding in shredded cheddar cheese, chopped green onions, and bacon bits for loaded mashed potatoes.
