Breakfast Burritos (Perfect for Two)

Breakfast Burritos are one of my very favorite breakfasts! They are flavorful, satisfying, and keep you full all morning long. These burritos are a great combination of protein, carbohydrates, and fiber! The eggs, cheese, and sausage give the burritos their great source of protein to help keep you full all morning. The tortilla gives the burritos carbohydrates needed for a quick kick of energy we all could use in the morning. The black beans give the burritos a healthy dose of fiber. It really is a very well-rounded meal all wrapped up in one hand-held package.

I also like breakfast burritos because they are portable breakfasts that you can take on the go. Many times I will make these ahead of time and refrigerate or freeze them for a quick breakfast later in the week when I know I will be having to rush out the door. Just remember if you freeze them, you will need to put them in the refrigerator to thaw overnight. Then you can throw them in the microwave for a minute and be on your way with a nutritious breakfast in hand!

Preparing the breakfast burritos will take approximately 25 minutes, but those minutes are well worth it for these yummy grab-and-go breakfasts. The first step is to brown the sausage. Drain grease and set aside. Next, melt the butter in a small skillet. As the butter is melting, stir the eggs, shredded cheese, salt, pepper, cumin, green salsa, and 2 tablespoons of the shredded cheese. Pour the egg mixture into the skillet, along with the cream cheese, and scramble the eggs. When the eggs are almost scrambled, add the sausage and black beans to the eggs and stir to combine. The last step is to assemble the burritos. Take one of the tortillas and top with shredded cheese and the egg mixture. Roll the tortilla by tucking the ends and then rolling to secure.

Need a satisfying breakfast that will stick with you until lunch? These Breakfast Burritos are very tasty with plenty of protien to keep you full until your next meal. These burritos freeze great. Double or triple the recipe to freeze and have these buritos on hand for quick breakfasts.

Ingredients
  

  • 2 Eggs
  • ½ tsp Unsalted Butter
  • ½ Cup Shredded Cheddar Cheese (Divided)
  • 2 Ounces Sausage (Browned)
  • 3 tbsp Canned Black Beans (Drained)
  • 2 tbsp Salsa Verde
  • 1 tbsp Cream Cheese
  • ½ tsp Cumin
  • tsp Salt
  • tsp Black Pepper
  • 3 Tortillas

Instructions
 

  • Brown sausage. Drain grease and set aside.
  • Melt butter in a nonstick skillet over low-medium heat. In a small bowl, mix eggs, salsa, 2 tablespoons of shredded cheese, cream cheese, cumin, salt, and pepper together. Pour into skillet once butter is melted.
  • Cook egg mixture over low-medium heat stirring frequently.
  • When the eggs are almost cooked, add in the browned sausage and black beans to combine and warm all ingredients.
  • Top tortillas with remaining shredded cheese and egg mixture. Roll tortillas into a buritto and serve.

Notes

If freezing the burritos, wrap the rolled burrito in plastic wrap and foil before storing in the freezer.
