Berry season, one of my favorite seasons! You really can’t get much better than fresh fruit. It’s almost as good as dessert. When ripe and in season, berries are so sweet they could substitute for dessert. This is especially true in the summer when we are craving cool foods that are light and don’t weigh us down. In this recipe, Berry Spinach Salad, the berries are used in a salad that would be perfect to serve as a light lunch for two, a mid-morning brunch with your spouse, baby or wedding shower, or brunch with the girls.
Making the salad is quick and easy. First, to be safe, wash all the produce. Next, slice the strawberries and chop the pecans. In a medium bowl or on two plates add spinach, berries, and pecans. Toss together and the salad is complete. How simple is that!
Now to dress the salad! The Berry Spinach Salad is served with a Strawberry Vinaigrette to compliment the berries in the salad, as well as bring some tanginess and depth to the overall flavor of the dish. To make the dressing, add the water, olive oil, red wine vinegar, chopped strawberries, and honey to a small blender or smoothie maker. Blend ingredients until strawberries are pureed. Add in poppy seeds and stir. The dressing is ready to be served over the Berry Spinach Salad. If making ahead of time, refrigerate dressing until ready to be served. When ready to serve, give the dressing a good whisking to bring the oil and vinegar back together.

Berry Spinach Salad with Strawberry Vinaigrette (Perfect for Two)
Ingredients
Berry Spinach Salad
- 4 Cups Fresh Spinach Leaves
- ½ Cup Strawberries (Sliced)
- ½ Cup Blueberries
- ½ Cup Raspberries
- ¼ Cup Pecans (Chopped)
Strawberry Vinaigrette
- 2 tbsp Cold Water
- 2 tbsp Olive Oil
- 2 tbsp Red Wine Vinegar
- 4 Medium-Sized Strawberries (Chopped)
- 2 tsp Honey
- ¼ tsp Poppy Seeds
Instructions
Berry Spinach Salad
- Wash fruits and spinach leaves. Pat dry.
- Slice strawberries and chop pecans.
- Add all ingredients to a large bowl.
Strawberry Vinaigrette
- Add cold water, olive oil, red wine vinegar, chopped strawberries, and honey to a blender or smoothie maker. Blend until ingredients pureed.
- Stir in poppy seeds and serve over salad.
