Baked Raspberry Oatmeal (Perfect for Two)

I’m a breakfast person. I never leave home without it and probably for good reason! I can be a bit cranky if I don’t have a little food in my belly! One go-to for breakfast is always the standard bowl of oatmeal. Oatmeal is very nutritious and filling. However, it can sometimes get a little boring. To change things up a bit, I like baked oatmeal. It is still just as nutritious and filling, but baked oatmeal has a different texture than regular oatmeal made in the microwave or stovetop. Some say the standard oatmeal is a bit mushy or slimy. However, baked oatmeal is more like a cross between a chewy granola bar and a cookie bar. It is really, really good. With this recipe for Baked Raspberry Oatmeal, I’m going to change your whole outlook on oatmeal.

The key to making this Baked Raspberry Oatmeal so good is brown sugar, almond butter, and of course the raspberries! Brown sugar brings a sweetness that gives the oatmeal its cookie flavor. Almond butter gives the oatmeal some depth and more protein to keep you full longer. Adding raspberries brings a sweet and tart flavor and keeps oatmeal moist. Add a few fresh raspberries to the top after baking to give the oatmeal an extra boost of fresh flavor. It’s delicious!

This Baked Raspberry Oatmeal is simple to make. After preheating the oven to 350 degrees Fahrenheit, butter two 12 ounce ramekins. Place the washed raspberries in the bottom of the ramekins and set them aside. Next, mix the oats, cinnamon, and salt in a small bowl. In another small bowl, melt the remaining butter in the microwave. Stir the brown sugar, vanilla extract, milk, almond butter, and eggs into the melted butter and whisk well. Sprinkle half of the dry ingredients into each ramekin over the berries. Pour half of the egg mixture into each ramekin over the dry ingredients & fruit. Bake for 25-30 minutes until the top is golden brown. Top with fresh raspberries and start your day with a sweet and nutritious breakfast! Enjoy!

Ingredients
  

  • ½ Cup Old Fashioned Oats
  • ¼ tsp Ground Cinnamon
  • ¼ tsp Salt
  • ½ Cup Milk
  • 2 tbsp Unsalted Butter (Divided)
  • ½ tsp Vanilla Extract
  • 2 tbsp Brown Sugar
  • 2 Eggs
  • 1 tbsp Almond Butter
  • 2/3 Cups Raspberries

Instructions
 

  • Preheat oven to 350° F. Butter the sides of two 12 oz ramekins with 1/2 tablespoon of butter.
  • Add washed raspberries to the bottom of the ramekins.
  • In a small bowl, mix the oats, cinnamon, and salt.
  • In another small bowl melt the remainder of the butter in the mircowave for approximately 10 seconds. Add in the milk, vanilla, brown sugar, almond butter, and egg. Whisk together to combine.
  • Sprinkle the dry ingredients evenly over the fruit in the ramekins.
  • Pour the egg mixture over the dry ingredients.
  • Bake approximately 30 minutes or until the top is golden brown.
